I figured there was no better time than right now to do a recipe roundup, since *most* of us are taking some much needed social distancing from society for the next little while.
I did a poll on Instagram if my followers even wanted this and it was a colossal landslide for YES! So, let’s just jump right in to it…
Thai Turkey Burgers – so so SO yummy! So much so, I ran out and got double the ingredients so I can make a double batch to keep in my freezer.
Grilled Huli Huli Chicken – if you find yourself in warmer temps and are ready to break in the BBQ after a long winter, give this recipe a try!
Grilled Mango Lime Chicken – see above! I make this ALL.THE.TIME. in the summer. Pro tip: use frozen mango if you can’t get your hands on a fresh one. It’s way easier to handle and way less clean up too! I find that 14 pieces of chicken does well with a double batch of marinade.
Grilled Malibu Chicken – another summertime favourite! Pro tip: if you’re not a fan of Swiss cheese (like me), try Havarti! I found the taste worked very well with the other ingredients.
Chicken Ranch Enchiladas – this recipe is really easy to put together and have on the table in under an hour. Pro tip: the chicken can be cooked in your Instant Pot, especially if you’re using frozen pieces. Using the same ingredients for making the chicken in the crock pot (except the olive oil), place them in your Instant Pot then add in 1 cup of low/no sodium chicken stock. Put the lid on and cook on Manual High for 8 minutes. Do a natural release for 10 minutes and then take the chicken out and shred. Follow the rest of the recipe as instructed.
Sticky Apple Cider BBQ Chicken – I love that I can make this one in the oven. It’s the perfect recipe for fall and winter. I found fresh apple cider at Walmart and I only used boneless/skinless chicken things
Ginger Sesame Chicken – I’ve only made this once but since it’s so easy and quick to prep, it’s definitely on the go-to list now.
Chili Lime Shrimp Tacos – super easy and healthy. This is one of my go-to’s when I have no idea what I’m making for dinner.
Saucy Garlic Butter Shrimp with Coconut Milk and Rice Noodles – anything Tieghan makes is amazing but this one really hit it out of the park. I basically had everything in my pantry (except for the fresh items, of course) so it was super easy to whip up quickly.
Santa Fe Beans and Rice – if you’ve had the Weight Watcher’s frozen version of this and loved it, you are in for a treat! This tastes exactly the same but without all the preservative crap plus the leftovers are even better.
Sloppy Joes – a classic! This recipe always turns out. Pro tip: just go ahead and double this recipe right away. The original doesn’t make much and this is another recipe where the leftovers make for a great lunch the next day.
Bang Bang Shrimp Pasta – this is my mom’s fav Instant Pot dish! Pro tip: make sure to use raw shrimp and not frozen, pre-cooked shrimp. It will get too rubbery and overcooked when you put it into the pasta (learn from my mistake!)
Mexican Lasagna – I’ve been making this recipe for years and it never disappoints. It’s a great one to make if you’re feeding a crowd or really like leftovers. It’s also great to make ahead and take to a neighbour or a friend who’s just had a baby (I have done this multiple times) – just make it in a disposable tin pan and you’re all set!
Hawaiian Ham & Swiss Sliders – if you make these, use the Everything Seasoning topping choice, just trust me!
Hawaiian Sweet Rolls – while, no this is not a dinner per say, these rolls go GREAT with dinner! And if you can’t find King’s rolls for the ham and swiss sliders, these are a great substitute!
